Twice Baked Potato Casserole
Twice baked potatoes are the perfect comfort food! Definitely start by cleaning and baking up some potatoes. Russets are the best, but you can use whatever you have available. Doing a salt and oil rub helps the potatoes get nice and crispy. Once the potatoes are baked up, let them cool for awhile before cutting them up. Personally I like the skins on because they are part of the twice baked potato casserole. Now it’s time to mix in all of your favorite twice baked potato toppings. Among these sour cream, sharp cheddar, bacon, and green onions and anything else your heart desires. Melt the cheese on top with the second round of baking.
