During the winter months, there’s nothing more comforting than cooking with your crockpot. On a relaxing afternoon, you can prepare your food and chop your veggies – a very therapeutic activity, if I do say so myself! Then as you go about your day, your house gets filled with the wonderful aroma of a wholesome dinner. Then when its time to eat, there’s no more prep needed – just simply sit down with your family and enjoy a hearty, home-cooked meal. I am a vegetarian myself, with so many people I know increasingly becoming vegetarian or vegan, I decided to create a delicious and comforting vegan chili recipe. This recipe also works if you’re on a paleo diet, too. It has no processed food ingredients, just brightly colored veggies, tomatoes, beans, and is lightly seasoned (yet bursting with flavor).
