Spiralized Sweet Potato with Pumpkin Alfredo Sauce
Have you had spiralized vegetables yet, one of the most popular current food trends? It is a trend that can be seen increasingly in cookbooks, restaurants, and grocery stores – they are vegetables (zucchini, sweet potato, butternut squash, yellow squash, etc) spiralized to look like and have the texture of noodles. I love that spiralized vegetables satisfy my craving for pasta, yet help me get a great serving of veggies in my day, instead! This recipe are spiralized sweet potatoes, topped with a creamy white wine pumpkin Alfredo sauce. The sauce uses real pumpkin, fresh Parmesan cheese, a Pinot Grigio reduction, and some other all-natural ingredients. This dish is bursting with flavor, and is sure to please even picky eaters. You can add a bit more of a rustic flavor by topping with fresh rosemary.
