Perfectly Roasted Sweet Potato Medallions
As a vegetarian, sweet potatoes are one of my favorite foods. They are a great source of protein, and are a very nutritious carbohydrate. And of course, who can resist their naturally sweet taste? One of my favorite things to make, whether for an appetizer, lunch, or dinner, are roasted sweet potato medallions.
They are easy to make, and lightly taste like cinnamon and sugar, without refined sugar added in! My perfectly roasted sweet potato medallions are roasted with coconut oil, cinnamon, and nutmeg. I like to keep the potato skin on, to help give it a little bit of texture variety. Another favorite thing I like to do with my sweet potatoes is top them to make an easy appetizer. One of my favorite topping pairs for these is goat cheese and fig jam!
