Healthy Raspberry White Chocolate Cookies
One of my favorite flavor combinations in a dessert is raspberry and white chocolate. The sweetness of the white chocolate chips mixed with the tart, fresh taste of raspberries is dessert perfection! I set out to do one of my favorite things: turn desserts that traditionally have a lot of butter and sugar into a treat filled with lower carb, more natural ingredients. The base of these raspberry white chocolate chip cookies are sweetened naturally, and have no food dye. They are colors purely with freshly pureed raspberries. Once baked, these raspberry white chocolate chip cookies are very soft, thick, and chewy. Since they aren’t filled with refined sugar, you can have these as a light dessert, bring them to a potluck, or even have as a little mid-day pick-me-up.
